  1. Heat the heavy cream in the microwave for 2 minutes without letting it boil.

  1. Mix the sugar, tartar cream, and egg whites in the mixer’s bowl. Gradually whisk the mixture.
  2. Fill in a saucepan with simmering water about two inches from the pan. Turn the stove over a medium heat.
  3. Set the bowl over the saucepan. Be careful to not let the bottom of the bowl touch the water. 
  4. Whisk the sugar mixture until the sugar has dissolved for about 4 minutes.

  6. Turn on the mixer and beat the mixture until it reaches a soft peak consistency.
  7. Gradually add the speed until the consistency changes to a stiff peak.
