Chocolate Ganache

  1. Heat the heavy cream in the microwave for 2 minutes without letting it boil.
  2. Then, pour the chopped chocolate over the heavy cream and let it melt.
  3. Gently mix the chocolate until it is fully combined.
  4. After that, rest the chocolate mixture until it is thickened.
  5. Just put it back in the microwave for 5-10 seconds if it gets too thick.

Cupcake Base

  1. Line the cupcake pan with cupcake liners.
  2. Then, preheat the oven to 350°F or 176°C.
  3. While waiting for the oven to heat, crush the graham crackers. Feel free to use a food processor, blender, or rolling pin.

  3. Set the bowl over the saucepan. Be careful to not let the bottom of the bowl touch the water. 
  4. Whisk the sugar mixture until the sugar has dissolved for about 4 minutes.
  5. After that, transfer the bowl back to the mixer.
  6. Turn on the mixer and beat the mixture until it reaches a soft peak consistency.
  7. Gradually add the speed until the consistency changes to a stiff peak.
